Yum Minus the Calories

If you LOVE pumpkin pie (2 DIE 4!), but you dread the calories, there's a simple crustless version that can count as your veggie for the meal:  simply take a can of pumpkin pulp, mix in some nutmeg and cinnamon, then nuke it till it's cooked.  Finally, mix in butter or olive oil and maple syrup (or brown sugar) and---VOILA!  Pumpkin pudding (sort of)!   (Here @ the 99 cents store, they sell pumpkin 2 cans/dollar.  A steal!)

    Sounds good! At Wallymart they sell a can of pumpkin already mixed with spices and sweetener--you add evaporated milk (and an egg, I think) and whip it all up together, and bake it--(It's more caloric than your punkin pie, but it tastes good!) [THUMBUP][THUMBUP]

    Oh, {swoon swoon} that sounds heaps better than my "Healthy Choice" version (have you noticed that the soups from that brand are about as appetizing as cement broth?). But I must behave myself and abstain. [SAD] [THUMBDOWN]

    Diana, I can't abide those canned soups except to cook with (like cream of chicken or mushroom etc.) I love veg. beef soup and make a big potful every few weeks, winter and summer. It's about time for another potful, actually! [THUMBUP][THUMBUP]

    Ahh, yes, homecooked soup! Yummers! I used to do that a good deal, too, before my crockpot croaked. [SAD]
